Kue means cake and cubit means pinch. The reason it is called pinch is because it is small and to eat it, it has to be pinched. Kue cubit is normally eaten as snacks. To make this cake, it is very easy.

No mixer is needed. You will need a whisk to whisk the batter. In Indonesia, the cake is made using kue cubit pan. The pan has several cavities where the batter kue cubit placed and cooked to make the cake. The pan is then covered and placed on the stove over a medium low or low heat.

When the cake is half done, the topping is placed on top of each cake. The cake is then cooked further until it is done. Since I don't have kue cubit pan, I use muffin pan.

The pan is filled up one-third full with the batter so that it has almost the same size as the original kue cubit.

Since it is will be hard to heat muffin pan evenly on a stove due to the size of the muffin pan, I bake the cake inside the oven.

If you have kue cubit pan, you can cook it the traditional way. In Kue cubit, there are many new creations of kue cubit in recent years. Some people add green tea powder to it to make it green. Some add food coloring to make it colorful. As for the toppings, you can top it with roasted shredded coconut, chocolate chips, etc. Originally, the topping are chocolate sprinklers or shredded cheddar cheese.

The recipe makes kue cubit 22 kue cubit. Ingredients: • 3 large eggs • 3/4 cup granulated sugar. Add vanilla and butter and whisk it. Add 1/4 cup of flour and whisk it until it is combined.

Add another 1/4 cup of flour and whisk it until it is combined. Add another 1/4 cup of flour and whisk it until it is combined. Add the remaining flour and whisk it until it is combined. Add milk little by little and whisk it until it becomes smooth batter. You may need to add more than 1/2 cup milk to make it smooth. • Cover and rest the batter for 1 hour.

• Preheat the oven to 300 deg F. • Brush the inside of muffin pan generously with vegetable oil. Make sure the inside is greased evenly so that the cake doesn't stick making it harder to get it out once you are done baking. • Place the muffin pan inside the oven to preheat it. Leave it inside the oven for 10 min. • While waiting during preheating the kue cubit pan, place the mixture batter in a pastry bag.

If you don't have pastry bag, you can use ziploc bag. Cut the end of the pastry bag. If using ziploc bag, cut the end of the ziploc bag on 1 side only. • Once the pan has been preheated, take it out of the oven.

Fill up each cavity of the muffin pan with the batter until it is 1/3rd full. Place the pan in the oven and bake it for 7 min. After 7 min, kue cubit the pan out and top it with shredded cheese or chocolate sprinkles. Place the pan back in the oven and bake it until a toothpick inserted in the center comes out clean (about 7 min). Remove the pan. Remove the cakes and let them cool down on a wire rack. Repeat this step until the batter has been completely used. You may need to grease the inside of the pan if needed.

Make sure that the inside is slicked evenly so that the cake doesn’t stick once you are done baking • Preheat oven and place the muffin pan inside for 10 minutes • While waiting for preheating the muffin pan, place the mixture batter in a zip lock bag and then cut off kue cubit 1side of the bag only • Once the preheating has been done take it out of the oven and fill up each cavity of the muffin pan with the batter till it is â…“ full • Place the pan in the oven for baking for about 7 minutes • After 7 minutes, take the pan out and top it up with shredded cheese and chocolate sprinkles • Put the pan back in the oven and bake until you can insert a toothpick firmly into a cake.

If you can, remove the pan and allow kue cubit to cool down. Repeat this step until the batter has been completely used. Remember, Kue cubit you want to use jelly for topping, be quick in the 2nd phase of baking, that is step 12– since jelly will melt in heat.

A recipe for Kue Cubit (Indonesian Pinch Cake)!

These little pinch cakes can be formed with a variety of flavors and toppings for quite the fun treat. Kue Cubit are mini cakes from Indonesia formed in a special pan. The name directly translates to Pinch Cakes due to kue cubit small size, particularly since they can be picked up with a pinch of the fingers and finished in a couple of bites. These cakes are popular in markets and food stalls. Along with plain vanilla cakes, they now come in a variety of colorful flavors including green tea, pandan, taro, chocolate, fruit, and more.

Kue Cubit are traditionally made in a mold pan called a Cetakan Kue Cubit, often with specialty shapes, and are cooked on the stovetop. Lace/Spiderweb crepes called Kue Laba-Laba can also be made by drizzling the batter across the pan.

A Few Tips If the batter is too thick to pipe into the pan, stir in a little more milk. If too thin, add a little more flour. Take care not to add too much flour or they will lose their light and fluffy texture. I do not have a Cetakan Kue Cubit, so I used an Aebleskiver pan (Amazon link) and filled the cavities about 1/3 full. The Aebleskiver pan doesn’t come with a cover, so I used a glass one that fit snugly around the pan.

A takoyaki, kue cubit, or other pan with individual cavities will also work. The amount of batter may need to be adjusted based on the size. Too much batter and the bottom of the pinch cakes will darken too much before the interior has a chance to set. If your pan is not nonstick, grease the cavities across the bottom and sides with butter or vegetable oil.

I used aebleskiver hooked wooden sticks (Amazon link) to remove the Kue Cubit. You can also use a couple of small spoons. Cook the Kue Cubit until just barely set and still a little shiny on top or until cooked completely through in about 4 minutes. Take care not to overcook. Adjust the heat between low and medium-low as needed to prevent kue cubit bottoms from burning.

In my cast iron pan, I kept the heat on the lowest setting. After cooking half of the plain vanilla batter, I mixed in about 1 teaspoon matcha dissolved in a teaspoon of hot water for a vibrant green color. I topped the pinch cakes with chocolate sprinkles (meises), crushed chocolate creme cookies/Oreos, and shredded, toasted coconut.

My personal favorite combination was the Matcha Kue Cubit with crushed chocolate cookies. Other options include kitkats, shredded cheese, or even fresh fruit. Cover the pan again and cook to desired doneness, until the tops are just barely set and still a little shiny or up to 4 minutes to completely cook through.

Adjust the heat between medium low-low as needed to cook the interior without burning the edges. •
